In Career Transition - "Employer" Options

I've heard that profiles won't come up in as many searches if there is not a current employer listed.
Some job seekers have already put in an end date, and I'm asked "what should I do?"
If they aren't seeking to create their own business page to showcase consulting work, what do you recommend?
I've seen a few profiles showing the following as their current employer.
